Superfoods Part VI

After a trip to the Farmer’s Market I am inclined to write about 3 Farmer’s Market Superfoods, all of the green variety. Each of these foods can add A Hint of Green to a meal or be the main ingredient.

1. Komatsuna – A type of leaf vegetable that is a variant of the same species as the common turnip. It is grown commercially in Japan, Taiwan and Korea and is also known as Japanese Mustard Spinach. This plant is an excellent source of calcium.
- How to Prepare: Komatsuna is usually stir-fried, pickled, boiled and added to soups or used fresh in salads.

2. Broccoli Raab – Also known as Rapini, it has been described as nutty, bitter, and pungent. Broccoli Raab is a good source of vitamins A, C, and K, as well as potassium, calcium, and iron. Rapini has many spiked leaves that surround a green bud which looks very similar to a small head of broccoli. There may be small yellow flowers blooming from the buds, which are edible.
- How to Prepare: Blanch them and sauté with a little garlic and olive oil as a side to any dish.

3. Tatsoi – Has a pleasant and sweet aroma flavor almost like a mild mustard flavor, similar to bok choi. Tatsoi is generally eaten raw, but may be added to soups at the end of the cooking period. When tatsoi is mixed with other greens it enhances the flavor and nutritional value. It also provides vitamins and minerals, and is a good source of fiber.
- How to Prepare: Use it in a salad or a stir fry. It is also used in soups, to add a delicate flavor. You can also sauté and pair with a larger meal.

SP Cleanse - Day 3

Today is Day 3 and things are getting a bit easier. I started this morning with; yes you guessed it a Strawberry, Kale and Pear with the SP Complete Powder.
After my smoothie I decided to head to the gym to get it out of the way, it is easy to become unmotivated on a rainy day so off I went to Cardio Sculpt and Pilates. I decided to take these two classes since they were taught by the same instructor as my classes yesterday. Cardio Sculpt was definitely a challenge it was constant movement using both your body weight and hand weights. I had to modify some of the moves as I am not yet ready to do jumping jacks on my foot but the class was great! I decided to stay for Roland’s Pilates class even though I was worn out from Sculpt as I knew it would stretch out my body and relax me before I spent the remainder of the day studying.
On my walk home from Astor Place NYHRC I stopped at Food Emporium for a few items….
-          Clementine’s
-          Strawberries
-          Zucchini
-          Canned Fresh Tomatoes with no additives
-          Artichoke
For lunch I decided to steam some julienned zucchini, peeled carrots, sliced yellow pepper and cherry tomatoes, it was delicious!!

I feel like I eat all day on this cleanse which is nice, but it definitely is keeping me busy between slicing and dicing fruits and vegetables for salads and smoothies. For an afternoon smoothie I decided to go with Strawberry, Kale, Pear, Mango and SP Complete.
Since it is a cold, rainy New York Day I am definitely thinking dinner will be julienned zucchini with a fresh tomato sauce… I will let you know how it turns out.

Until tomorrow…

SP Cleanse - Day 2

Well I made it through day 1 of the SP Cleanse which is usually the toughest… I find the first few days to be a bit rough, once you find the balance and get the timing of meals right things seem to go a little smoother.

I started off the day with a Fruit filled smoothie – mango, strawberries, kale, pear and the SP Cleanse Powder as well as the necessary vitamins.
I then headed to an Interval Sculpt class at NYHRC. I had never been to a class with the instructor today, Roland Brown, but now I plan to find all of his classes and work them into my schedule. The class started with a light warm up and then moved through a series of arms and legs. I love getting the arms and legs in at the same time it allows you to focus on holding your core. Next we moved to leg and butt work on floor work which was great for me since I am still healing from my broken foot. He then moved us on to a joint abdominal and arm series and we finished the class with 10 extra minutes of stretching which was great. It is important when you are cleansing not to overwork the body, this 60 minutes was the perfect workout for me today.

After class wrapped up I stopped by a farm stand for some fresh fruit and vegetables. The remainder of the day will be filled with studying for a final and 2 more smoothies another Farmer’s Market Salad and dinner which will be julienned zucchini with fresh vegetables that I have in my fridge (peppers, tomatoes and more) and some brown rice.

I will be ending the day with a trip to see my Acupuncturist, Maureen at Acupuncture Bodywork who I have not seen since before I broke my foot. I am looking forward to having Maureen harmonize my body’s imbalances and also getting the blood flowing properly back into my broken foot. I also think the acupuncture will pair nicely with the SP Cleanse.

Stay tuned for recipes…

SP Cleanse - Day 1

When preparing for a cleanse it is important to make sure that you have all of the things you need, and in this case fruits, vegetables and more fruits and vegetables.

I dropped by the Union Square Market to stock up on all sorts of greens.
Tuscan Kale, Swiss Chard, Komatsuna, Tatsoi
Broccoli Raab, Bok Choy, Scallions, Chives

While out I also picked up fresh fruit and vegetables: Strawberries, Raspberries, Blackberries, Pears
 Mangos, Tomatoes, Lemon
I also picked up some brown rice as well as wild rice as the SP Cleanse allows 2 servings a day.
I started today with a Smoothie consisting of Mango, Pear and Kale along with SP Complete Powder and the Cleanse and Gastro-Fiber pills.
After my filling drink I headed to the gym for a Body Sculpt class and another 45 minutes on the bike where I got in some reading for a final I am taking later this week.

Once I completed my workout I came home and made a big salad. The base of the salad was:
Radicchio, Frisée, Komatsuna, Tatsoi
I added the following vegetables into the salad:
Cherry tomatoes, Avocado, Cucumber, Hearts of Palm, Corn, Radish, Chives and Scalions

I topped the salad with a squeeze of lemon juice. The wonderful thing about all of the different greens is they each have such distinct flavors that you do not need to overly dress the salad.

If you have a Farmer’s Market near you I highly suggest you go and try out all of the different types of produce, each vegetable contains vitamins, minerals and nutrients and can add so much to your diet both eaten raw or when cooked.

For dinner tonight I plan to have sautéed Broccoli Raab, Tuscan Kale, and Cherry Tomatoes over brown rice. Followed by a smoothie of Strawberries, Pear and Spinach with SP Complete.

Spring Cleaning - SP Cleanse

After doing the SP Cleanse in September and dropping 12lbs and keeping it off I was very happy. It was nice to see this was not an unrealistic cleanse. This was about proper eating habits and shifting the focus of your diet to be more natural and healthy. The cleanse is made by SP, which stands for Standard Process Inc. The company is in Wisconsin. They use whole food ingredients in their programs, not artificial stuff created in a lab like you'd buy off the shelf at most stores. SP is sold through healthcare professionals. I bought mine through Synergy Wellness. This cleanse consists of a natural shake mix, gastro-fiber capsules, cleanse capsules and green food capsules.

Below are further details on the program...

SP Cleanse®
SP Cleanse enlists the detoxifying properties of 20 different whole foods and botanicals in this vegetarian nutritional supplement. The phytonutrients from these multiple ingredients help the body eliminate toxins that originate in the environment, as well as metabolic toxins that are given off internally.

The vitamin complexes, minerals, and phytonutrients in SP Cleanse support the body’s internal waste-removal systems by:
  • Maintaining healthy liver detoxification function
  • Encouraging healthy kidney function
  • Promoting efficient gastrointestinal elimination
  • Supporting lymphatic system function
  • Helping maintain healthy blood*
SP Complete™
SP Complete mixes with water and fruit or vegetables to make a nutritious supplement shake-completely portable for today’s busy schedules. It offers a balance of essential macro- and micronutrients from plant sources in a highly bioavailable form.

The natural whole food ingredients used to formulate SP Complete deliver powerful antioxidant protection to promote cellular health and support healthy cardiovascular, digestive, and nervous system function. Whether taken alone or before meals, a supplement shake made with SP Complete provides essential vitamins and minerals to the body during purification. In addition, SP Complete can be used outside of the purification program to replace vital nutrients often lost during the refining process of many of the foods we buy*

Gastro-Fiber®
Dietary fiber comes from the cellular walls of plants and has specific effects on different areas of gastrointestinal function. Gastro-Fiber contains phytonutrients from psyllium, collinsonia root, apple pectin, fennel seed, and fenugreek seed.

These whole-food sources function synergistically to:
  • Help cleanse and lubricate the intestines
  • Encourage regular elimination
  • Promote pH balance throughout the gastrointestinal tract
  • Provide an optimal environment for the natural growth of “friendly” intestinal bacteria*
SP Green Food
SP Green Food is made up of five organically-grown whole food concentrates: Brussels sprouts, kale, alfalfa, buckwheat, and barley grass. In addition to their natural bioavailability, these foods contain vitamins, minerals, and other unknown synergistic cofactors. Brussels sprouts and kale help maintain cellular health supplying nutrients that work to detoxify the liver. The phytonutrients in these two green vegetables help protect many of our major organs. Nutrients found in Brussels sprouts and kale promote enzymatic activity required to help detoxify the liver. They also stimulate the natural process designed to clear damaged cells from the body *

Week One
2-3 SP Complete shakes per day
7 SP Cleanse capsules 3 times daily
3 Gastro-Fiber capsules 3 times daily

Weeks Two & Three
2-3 SP Complete shakes per day
3 Gastro-Fiber capsules 3 times daily
5 SP Green Food capsules 2 times daily

I start each morning with a fresh fruit and vegetable shake with powder, a salad for lunch, an afternoon shake for snack and vegetables with 1 serving of brown rice for dinner, and a third shake as an evening snack. This goes on for 7 days. Days 8-21 are similar I just incorporate 3 servings of chicken or fish three times a day.

What I like about this cleanse is it is not only liquid based, you are eating all day and are able to enjoy a variety of both fruits and vegetables.

NYC Brunch Edition: `Inoteca

What a gorgeous New York City weekend we had sunshine and warm weather, ideal for outdoor dining. My friend Cari and I decided to grab brunch not once, but twice this weekend at `Inoteca. Saturday was such a hit we just had to go back again Sunday.

If you follow my blog you know Kale has quickly become one of my favorite leafy green vegetables and `Inoteca has a Kale Salad that is right up my alley - Cavolo Nero w/ fennel, ricotta salata & candied almonds… can you say HEAVEN! I decided to pair my salad with 3 different Bruschette; caponata, sweet pea and zucchini and had a glass of Lambrusco… let’s face it no brunch is complete without a drink. Cari decided to go with a breakfast Panini which was also delicious! I do not have a photo of that; I was too busy enjoying my salad.

Well Sunday morning came along and I was still thinking about my salad from the day before and since it was another nice day Cari and I decided to meet up for Brunch again. This time we both went for salads and Bruschette. I again had to Cavolo Nero w/ fennel, ricotta salata & candied almonds (I wanted to be sure I had it one more time before my cleanse) as well as3 different Bruschette; tapenade, caponata  (so good I had it twice) and lastly toscana which was a Chicken Liver Pâté that the waiter recommended. I again paired the meal with a glass of Lambrusco.

After seeing how delicious my salad was Saturday, Cari decided to go for a salad and Bruschette as well on Sunday. Cari ordered the Insalata di gamberetti which was a salad of poached shrimp over a bed of watercress, breakfast radishes and an orange dressing with orange rind , this salad was absolutely delicious, the perfect portion size and fantastic flavors. She tried 3 new Bruschette; fagioli, pesto and roasted garlic. She paired her meal with a glass of Prosecco.

All I can say is if you would like a fantastic salad for a light lunch of dinner at `Inoteca is a great option and of course they have much more on the menu!!!
