Farmer's Market - Part VIII

 As you know by now I love my green vegetables, and after my last few trips to the farmers market my love has only grown stronger . Once or twice a week, I head over to Lani’s Farm stand at the Union Square Farmer’s Market.

I always find myself drawn to Lani’s because they have vegetables cooking as you are shopping. They usually have somewhere between 2 and 6 vegetables going at once and they prepare them perfectly. Each vegetable is cooked EXACTLY the same way, Extra Virgin Olive Oil, Sea Salt, a little Jalapeño and THAT IS IT, does it get any easier? *note: some greens are blanched in water for a minute prior to sautéing*

After trying what they have cooked I usually choose 3 vegetables to base my dishes around for the week. Below are my most recent additions to my life, and you should consider adding them to yours.  Try these vegetables prepared both as mentioned above and raw.

Bok Choy - Also known as Chinese white cabbage, this vegetable is a great addition to your diet and can be found year round in farmer’s markets and supermarkets anywhere. The healthiest member of the cabbage family is full of Vitamin C, Calcium, Dietary Fiber and Potassium. Enjoy this vegetable prepared many ways, sauté, braise or add to a soup. Mildly flavored with a tender sweetness this vegetable is a welcome accompaniment to many meals without overpowering.

Italian Dandelion - This edible green has been used as medicine. Dandelions are very nutritious having more vitamins and minerals than most vegetables. The leaves are eaten in a salad or boiled in water to make tea, which is known to strengthen and purify the blood. To learn more about this top ranking green check out this article Health Benefits of Dandelions .

Mustard Greens - Mustard greens are low in calories and contain a large amount of antioxidants. They provide an excellent source of vitamins B6, C, and E, folic acid, calcium, carotenes, manganese, copper, and fiber.  They also offer a good source of phosphorus, vitamins B1 and B2, magnesium, protein, potassium, and iron. Studies have shown that mustard greens have anticancer effects and assist in supporting bone health. Mustard greens are also beneficial especially for women who are going through menopause.  They have the ability to protect against breast cancer and heart disease. 

 Mizuna - One of the mildest mustard greens, mizuna, which is often found in mesclun mixes is high in immune-boosting vitamin C, folate, and iron. It also contains powerful glucosinolates antioxidants linked to decreased cancer risk. One of the most famous and unique Japanese greens, they are mildly peppery in flavor. Usually eaten raw in salads, they are also good when lightly cooked. 
 
Swiss Chard - With white being the mildest flavor of all different color chards, this vegetable is good even in soups, or replace spinach in any dish for a meatier texture.  Like spinach, it is the store house of many phytonutrients that have health promotional and disease prevention properties. Rich in Vitamin K, also rich source of omega-3 fatty acids; vitamin-A and flavonoids anti-oxidants like ß carotene, α-carotene, lutein and zeaxanthin this vegetable will surely enhance your diet.

What to do with an Heirloom

If you find yourself walking through a farmers market or grocery store lately then you are sure to find plenty of heirloom tomatoes.

Walking through the Union Square Farmer's Market early this morning I decided to pick up 6 tomatoes a clove of garlic and head home to make some soup.

This recipe is quick and easy and can be eaten as is for a nice gazpacho feel, it can also be added to for a filling dish, and for those with no dairy allergy feel free to add some cream for a thicker texture. 

Ingredients:
6 Heirloom Tomatoes
2 Cloves of Garlic
E.V.O.O.
1 tbsp Butter
Salt and Pepper (light seasoning)
First place the butter and oil in the pan and let heat up, once the butter is melted place the crushed garlic cloves and let simmer. Next add the sliced up tomatoes to the pot. Stir the tomatoes for a minute and then cover and let sit.
Check the pot every few minutes to stir. Once the tomatoes have softened and fallen apart lower the heat to let the pot simmer. 
Once the soup is made you can go ahead and choose to eat alone, place in a bowl and top with some fresh basil and parmigiana if you do not have a dairy allergy.

Benefits of Juicing

After learning more about a raw food diet I decided to step up my "juicing game" I decided to challenge myself to a 4 day juice cleanse, and I was shocked at how I felt. Prior to the "cleanse" I thought I would be spend the 4 days tired and miserable but it was just the opposite, I was filled with energy and never had a moment of bitterness or anger towards the cleanse. I did not go into this cleanse looking to loose weight, I wanted to challenge myself to see what my body can handle. I also thought it would be good to treat some pain and swelling I was having in my jaw. For those of you unaware I had reconstructive jaw surgery and was suffering from a major flare up. 

I decided to look into the benefits of fruits and vegetables and go from there. Here is a list of some of my findings:

Apple - increases elimination
Beet - encourages a healthy cardiovascular function, possesses strong detoxifying properties
Carrot - liver cleanser
Cucumber - purifies the blood and cleans the intestines
Ginger - known as a natural healer for the entire body, reduces inflammation, aids digestion
Grapefruit - improves liver function, high in antioxidants
Lemon - liver cleanser
Pear - high in vitamin c and copper, potent anti-inflammatory 
Pineapple - reduces inflimation
Spinach - provides support to both liver and kidney function, reduces fatigue, heals the digestive tract, high in antioxidants

When juicing it is important to use Organic fruits and vegetables in order to steer clear of pesticides.

Here are a few of my favorite combinations:

Hint of Greens - Pear, Cucumber, Pineapple, Ginger
Tons of Greens - Spinach, Cucumber, Apple, Parsley, Ginger, Lemon
BApples - Beet, Apple, Pineapple
aLive - Carrot, Apple, Ginger
Gingade - Grapefruit, Ginger
When making juice don't be afraid to try out different combination's, you will be surprised how great fruit and vegetables blend together to create unique flavors.

A Day Full of Liquids and Workouts... and more


I started the day catching up on some Nutrition School work. Last week had been extremely busy and it was time to get back on track. While I was home doing my work I made myself a Boars Head Low Sodium Turkey Sandwich and had it with a BluePrint Red Juice containing Apple, Carrot, Beet, Lemon and Ginger. The flavor of the juice packs a big punch, it is really refreshing and an enjoyable way to add fruits and vegetables into a diet. 

After I finished a good portion of my work I headed to spin class at NYHRC. I had broken my foot back in February and was unable to spin until this past weekend. This was my third class in four days, I am an addict!!!! The class was fantastic I really got in a good burn. There were quite a few hills and the perfect amount of sprints. While there was no jumping today I was glad because I figured both my legs and foot could use the break. 

When spin was over I headed downstairs to the attached to-go Organic and Vegetarian restaurant, Terri. For some reason I had never noticed it before but my friend Nikki mentioned dropping in after a recent workout and walking out with a great juice and some kale chips and mentioned some salads they had on the menu. Since I knew I would be going to Core Fusion at Exhale later in the day I thought it would be good to grab something on the go since I would be running errands for a bit and not home before class.

I decided to order the Brazilian Bombshell Smoothie which contains acai, acerola, blueberry, mango, banana and I replaced soymilk with almond milk, I also got a container of Kale Chips and took a menu to go as I knew this would be the first trip of many to Terri. (PS – they offer a 3 day juice cleanse for $155!!!)  The juice was absolutely fantastic and the chips were the perfect consistency, it was exactly what I needed to take me through the day until Core Fusion.

After some further school work, searching for jobs and running some errands it was time to head to Core Fusion. Thanks to Ruelala.com bought a 10 pack for classes otherwise I would be sticking to the DVD’s right now. Well, I am so glad that I was able to go to class today, the teacher Michael who was a substitute for the day was great and I felt thoroughly challenged throughout the class (and just 4 hours later I am feeling sore.)

I ended the day with a favorite, SUSHI! A brown rice California roll, brown rice Alaska roll and one piece of Ikura sushi followed by a Blueprint Green Juice containing romaine, celery, cucumber, apple, spinach, kale, parsley, lemon and ginger. 

Day’s like today do not happen as often as I would like but I look forward to challenging myself these days more of a common occurrence in my life.  Of course I am headed out of the city for a good portion of the next two weeks and I hope I can find options equally as good for me.

NYC Brunch Edition: `Inoteca

What a gorgeous New York City weekend we had sunshine and warm weather, ideal for outdoor dining. My friend Cari and I decided to grab brunch not once, but twice this weekend at `Inoteca. Saturday was such a hit we just had to go back again Sunday.

 



If you follow my blog you know Kale has quickly become one of my favorite leafy green vegetables and `Inoteca has a Kale Salad that is right up my alley - Cavolo Nero w/ fennel, ricotta salata & candied almonds… can you say HEAVEN! I decided to pair my salad with 3 different Bruschette; caponata, sweet pea and zucchini and had a glass of Lambrusco… let’s face it no brunch is complete without a drink. Cari decided to go with a breakfast Panini which was also delicious! I do not have a photo of that; I was too busy enjoying my salad. 

Well Sunday morning came along and I was still thinking about my salad from the day before and since it was another nice day Cari and I decided to meet up for Brunch again. This time we both went for salads and Bruschette. I again had to Cavolo Nero w/ fennel, ricotta salata & candied almonds (I wanted to be sure I had it one more time before my cleanse) as well as3 different Bruschette; tapenade, caponata  (so good I had it twice) and lastly toscana which was a Chicken Liver Pâté that the waiter recommended. I again paired the meal with a glass of Lambrusco. 
 
After seeing how delicious my salad was Saturday, Cari decided to go for a salad and Bruschette as well on Sunday. Cari ordered the Insalata di gamberetti which was a salad of poached shrimp over a bed of watercress, breakfast radishes and an orange dressing with orange rind , this salad was absolutely delicious, the perfect portion size and fantastic flavors. She tried 3 new Bruschette; fagioli, pesto and roasted garlic. She paired her meal with a glass of Prosecco. 

All I can say is if you would like a fantastic salad for a light lunch of dinner at `Inoteca is a great option and of course they have much more on the menu!!!

Missing the Gym

On the evening of February 12th I was dancing the night away at my friend Lucy's sister's Bat Mitzvah, well let’s just say I had a little too much fun and ended up with a broken foot, a spiral fracture to the 5th Metatarsal to be exact.


Prior to breaking my foot I had made a commitment to myself back in September of 2010 to workout 5-6 times a week. Since September I had followed through on that commitment doing everything from spinning, Zumba, total body conditioning, Pilates, Core Fusion and so much more!!!

Luckily I had made that commitment to myself otherwise the last 4 weeks on 1 leg would have been very tough. Core Fusion made my legs so much stronger and Pilates had strengthened my core muscles allowing my getting around on crutches to be a bit easier.

Now that it has been a little over 4 weeks in a cast I am finally able to start light workouts again. So today I will begin with some Core Fusion Pure Abs & Arms and some leg lifts.

Very much looking forward to getting back into the spin studio in April!!!!
